uh it was a braised BISON short rib. Lower in fat and calorie content and healthier than pork or beef ribs which is what the recipe above you posted references. Bison can be part of a healthy diet because it's leaner than pork or beef. Check the KellyLiken website-you'll see it was BISON. It was NOT this coffee braised rib recipe you posted.
